The cooking surface is 18/8 stainless steel, neutral to food, including acidic sauces. The exterior is 18/0 stainless steel, easy to clean and suitable for all cooking surfaces, including gas, electric and magnetic induction. For high performance, Vollrath Tribute pans have a core of durable 3004 aluminum throughout the pan and sides. The sturdy handle(s) are riveted to the pan with low profile stainless rivets. Pans with the insulated gator grip handle are rated up to 450F for oven or stovetop use. Vollrath Tribute tri-ply pans are NSF certified for use in commercial kitchens. Lids (if available) are sold seperately.
