The Kershaw Shun Elite series offers a stunningly and beautiful design with unparalleled performance. The secret is in the advanced steel used to create these attractive blades. The blade begins with a cutting core of SG-2, an exotic Japanese powdered steel. The advantage of powdered steel is that every element used to create the steel is evenly blended, eliminating weak spots or imperfections. The high density and ideal grain structure of the resulting SG-2 allows us to temper it to an extremely high hardness (64-66 on the Rockwell scale) for an exceedingly sharp, smooth and durable edge. That's just the start of the Elite process. Each Shun Elite Knife is clad with two layers of SUS410 steel, a softer stainless steel that provides additional strength, flexibility, and corrosion resistance. All of this technology means Shun Elite blades will stay sharp several times longer that comparable cutlery, while providing the flexibility and cutting performance that top chefs demand.
